Zoodles + Tomato Pasta + Protein
Ingredients:
2 medium zucchini
2 boneless, skinless chicken breasts, OR 2 Hard Boiled Eggs, OR 8 oz of ground turkey, or 8 oz of tempeh
2 medium tomatoes, diced
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper, to taste
Fresh basil leaves, for garnish (optional)
Instructions:
Prepare the zucchini noodles by using a spiralizer or julienne peeler to create long, thin strands resembling spaghetti noodles. Set the zoodles aside.
Preheat a grill or grill pan over medium-high heat. Season your protein with salt and pepper, then grill until cooked thoroughly. Remove and let it rest for a few minutes.
In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the diced tomatoes, dried basil, dried oregano, salt, and pepper to the saucepan. Stir well and let the sauce simmer for 10-15 minutes, allowing the flavors to meld together. If desired, use a hand blender or blender to puree the sauce for a smoother texture.
While the sauce is simmering, heat a separate skillet over medium heat. Add the zucchini noodles and sauté for 2-3 minutes until they are just tender. Be careful not to overcook them, as they can become mushy.
Divide the zucchini noodles among serving plates or bowls. Top with your protein and spoon the homemade tomato sauce over the noodles and chicken.
Garnish with fresh basil leaves if desired, and serve.
