Coconut Lime Energy Bites

Ingredients:

  • 1 cup shredded coconut (unsweetened)

  • 1/2 cup raw almonds

  • 1/2 cup dates, pitted

  • Zest of 1 lime

  • Juice of 1 lime

  • 1 tablespoon coconut oil (melted)

  • 1 tablespoon maple syrup or agave nectar

  • 1/2 teaspoon vanilla extract

  • Pinch of sea salt

  • Additional shredded coconut for rolling (optional)

Instructions:

  1. In a food processor, combine shredded coconut, raw almonds, dates, lime zest, lime juice, coconut oil, maple syrup (or agave nectar), vanilla extract, and sea salt.

  2. Process the mixture until it comes together and forms a sticky dough. You may need to scrape down the sides of the food processor bowl a few times to ensure all ingredients are well incorporated.

  3. Once the mixture is ready, scoop out small portions and roll them into balls using your hands. If desired, you can roll the balls in additional shredded coconut for extra texture.

  4. Place the energy balls on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.

  5. Once chilled, the raw coconut-lime energy balls are ready to serve. Store any leftovers in an airtight container in the refrigerator for up to one week.
