Lemon Garlic Pasta

Ingredients:

  • 8 ounces (225 grams) gluten-free pasta (e.g., brown rice pasta, lentil pasta)

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • Juice of 1 lemon

  • 1 can (15 ounces or 425 grams) chickpeas, drained and rinsed

  • Fresh parsley, chopped (for garnish)

  • Salt and pepper to taste

Instructions:

  1. Cook the gluten-free pasta according to the package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat.

  3. Add minced garlic to the skillet and sauté for about 1-2 minutes until fragrant and lightly golden.

  4. Add the cooked gluten-free pasta to the skillet, followed by the lemon juice. Toss the pasta with the garlic-infused oil and lemon juice to coat the noodles evenly.

  5. Add the drained and rinsed chickpeas to the skillet and gently mix them with the pasta.

  7. Cook the pasta and chickpeas for an additional 2-3 minutes, stirring occasionally, until heated through.

  8. Remove from heat and garnish with fresh parsley.

  9. Serve the gluten-free Lemon Garlic Pasta with Chickpeas immediately.
